Tasting notes on the wine:
"A slightly sparkling, methode ancestrale wine made from 100 percent riesling. It’s aperitif-style, with tons of juicy stone fruit, wildflowers, clover honey, and bright-green apple skins. There’s also a savoriness to the wine — think mustard seed and bell pepper. Pair this with spicy cuisine (Thai would be fantastic) or get creative with your best charcuterie board, with items like saucisson, comte, or a manchego.” — Chloe & Kaitlyn
About the winemaker:
"Pirouettes is a project conceived by long-standing Alsatian winemaker legend Christian Binner. It’s an informal association of growers that works under his tutelage alongside two contributing enologists, Pierre Sanchez and Xavier Couturier.
