Tasting notes on the wine:
"In Catalan, 'azimut' refers to ‘the line between the sun and the sea,’ so I like to think this wine was meant for easy-breezy seaside hangs. Crisp and joyful with a fine bubble and a nose full of green orchard fruits, you could easily mistake it for good Champagne. Drink it on its own, or pair it with lobster in lots of good butter and a pile of summer greens." — Lauren Friel
About the winemaker:
"The Suriol family’s approach is a rare, handcrafted expression of Catalan terroir, focusing on indigenous grapes and traditional practices, always with sustainability in mind. This wine’s a blend of macabeo, xarel-lo, and parellada (all organic) and fermented with wild yeasts in bottle, then aged for a minimum of 10 months using biodynamic cellar practices. The Suriol family makes two lines of wines, and the Azimut collection is produced using organic grapes they purchase from their neighbors. In doing this, they’re trying to encourage organic viticulture in the region." — Lauren Friel
